How to properly sanitise and maintain your butcher block
A butchers block is a hugely useful piece of equipment in any commercial butchery shop, and like all similar equipment, it functions best when it’s given the proper care. It’s a hardworking surface that comes into direct contact with raw meat, poultry, and fresh produce, which means that cleaning it regularly is really important for stopping bacteria from developing. How to prepare your butcher block for cleaning
Before you start sanitising your butcher block, you need to make sure it’s free from loose food particles and debris. Begin by using a scraper or a flat-edged spatula to remove any meat, fat, or vegetable residue left on the surface. This first step stops particles from interfering with the sanitising process and gives you a clear working surface. Once you’ve scraped the top thoroughly, sweep the waste away so it can’t recontaminate the area.
After scraping, it’s worth giving the surface an initial wipe with a damp cloth soaked in warm water. This loosens anything that’s stuck on and removes surface grease, making it easier for your cleaning solution to work effectively. Use a separate cloth or disposable towel for this stage, and make sure the cloth is clean to avoid spreading bacteria. This essentially helps to ensure that the cleaning solution reaches every part of the surface, removing residue that could harbour bacteria.

It’s a quick method that helps maintain hygienic conditions, as long as you rinse thoroughly afterwards.
Another safe option is to use white vinegar. Vinegar has natural antibacterial properties and can be applied directly to the surface without dilution. Pour or spray it on, spread it evenly with a clean cloth, and leave it to air dry. For extra cleaning power, you can sprinkle coarse salt onto the surface first, then rub it in with half a lemon. The salt scrubs away stubborn marks, the lemon adds acidity to help kill bacteria, and the vinegar keeps the surface safe for food preparation. These approaches are effective without damaging the wood, provided you avoid soaking the block excessively.
How to maintain your butcher block for long-term use
As well as regular cleaning of your butcher bloc, you’ll also need to protect the wood from drying out, splitting, or absorbing unwanted odours. Here’s where food-grade mineral oil comes in handy – it’s a key part of this process. Once the block is completely dry after cleaning, pour a small amount of oil onto the surface and spread it evenly with a lint-free cloth. Then, allow the oil to soak in for several hours, then wipe off any excess. This helps the wood stay supple and resistant to moisture.
It’s also a good idea to store and position your butcher block in a way that protects it from extremes. Keep it away from direct sunlight, heat sources, or very damp areas, as these conditions can cause the wood to warp or crack. If you use your block heavily, rotate it occasionally so the wear is spread evenly across the surface.
